Description

Ingredients

  • 1 lb Chicken thighs
  • 1/3 cup Olive Oil
  • 1.5 tbsp Lemon Zest
  • 2 tbsp Lemon Juice
  • 2 tbsp Honey
  • 1.5 tsp Garlic Powder
  • 2.5 tsp Oregano
  • 2 tsp Basil
  • 1.25 tsp Salt
  • 1/2 tsp Black Pepper
  • 3/4 tsp Red Pepper Flakes
  • 1 cup Greek Yogurt
  • 1/2 cup Cucumber (grated)
  • 1.5 tbsp Additional Lemon Juice for Tzatziki
  • 1.5 tbsp Olive Oil for Tzatziki
  • 1.5 tsp Minced Garlic
  • 1/2 tsp Salt for Tzatziki
  • 1 tbsp Dill
  • 2 cups Cooked Rice
  • 2.5 cups Tomatoes (diced)
  • 2 cups Cucumber (diced)
  • 4 cups Lettuce (torn or chopped)
  • 1 cup Red Onion (thinly sliced)
  • 1/2 cup Feta Cheese (crumbled)
  • 1/4 cup Fresh Parsley (chopped)

Instructions

  1. Marinate the Chicken: In a bowl, mix the olive oil, lemon zest, lemon juice, honey, garlic powder, oregano, basil, salt, black pepper, and red pepper flakes. Add the chicken and coat well. Allow to marinate for at least 15 minutes.
  2. Prepare the Tzatziki: In another bowl, combine Greek yogurt, grated cucumber, additional lemon juice, olive oil, minced garlic, salt, and dill. Mix thoroughly and set aside in the fridge.
  3. Cook the Chicken: Heat a grill or skillet over medium-high heat. Cook the marinated chicken for 6-7 minutes on each side until fully cooked (internal temperature of 165°F/75°C), then rest and slice.
  4. Assemble the Bowl: In a large serving bowl, start with a base of cooked rice, then add diced tomatoes, diced cucumbers, shredded lettuce, and sliced red onion. Top with sliced chicken and drizzle tzatziki over everything. Garnish with crumbled feta cheese and parsley.
  5. Serve: Enjoy the Mediterranean Chicken Bowl warm!
