Description

Delightful and healthy Mediterranean Chickpea Pita Tacos, packed with crispy chickpeas, fresh vegetables, and creamy tahini sauce wrapped in soft pita.


Ingredients

  • 1/2 cup cooked chickpeas
  • 1 tablespoon olive oil
  • 1/2 teaspoon cumin
  • 1/2 teaspoon paprika
  • 1/4 teaspoon garlic powder
  • Salt to taste
  • 4 small pita breads
  • 1 cup shredded lettuce
  • 1/2 cup diced tomatoes
  • 1/4 cup diced cucumbers
  • 1/4 cup diced red onions
  • 1/4 cup crumbled feta cheese
  • 2 tablespoons tahini sauce

Instructions

  1. Grab a pan and heat the olive oil over medium heat.
  2. Add the cooked chickpeas, cumin, paprika, garlic powder, and a pinch of salt to the pan. Cook for around 5-7 minutes, stirring occasionally until slightly crispy.
  3. While the chickpeas sizzle, warm the pita breads in a toaster or oven for about 1-2 minutes until soft.
  4. Lay out the warmed pita breads and evenly distribute the chickpea mixture among them.
  5. Top each pita with shredded lettuce, diced tomatoes, cucumbers, and red onions.
  6. Add crumbled feta cheese over each pita.
  7. Drizzle tahini sauce over the assembled tacos.
  8. Fold the pita breads gently to form tacos and serve immediately.

Notes

Serve fresh and warm. Customizable with extra ingredients, and can be stored in airtight containers for 2-3 days.
