Delicious Vegetarian Lasagna

Description

A hearty and flavorful vegetarian lasagna layered with fresh vegetables and rich cheese.


Ingredients

  • 9 lasagna noodles
  • 2 cups ricotta cheese
  • 3 cups spinach, chopped
  • 2 cups marinara sauce
  • 2 cups mozzarella cheese, shredded
  • 1 cup parmesan cheese, grated
  • 1 zucchini, sliced
  • 1 bell pepper, chopped
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Cook the lasagna noodles according to package instructions and set aside.
  3. Sauté the onion and garlic in a pan until translucent.
  4. Add the zucchini, bell pepper, and spinach, cooking until wilted.
  5. Mix the ricotta cheese with oregano, salt, and pepper.
  6. Spread a layer of marinara sauce on the bottom of a baking dish.
  7. Layer 3 lasagna noodles on top, followed by half of the ricotta mixture, half of the sautéed vegetables, and a third of the mozzarella cheese.
  8. Repeat the layers once more and top with remaining noodles, marinara sauce, mozzarella, and parmesan.
  9. Bake for 45 minutes or until golden and bubbly.
  10. Let it cool for 10 minutes before slicing and serving.

Notes

For added flavor, you can add fresh basil or other herbs to the ricotta mixture.
