Description

Delicious and easy Mediterranean Quesadillas filled with fresh spinach, creamy cheeses, and vibrant veggies.


Ingredients

  • 4 flour tortillas
  • 1 cup fresh spinach (chopped)
  • 1/2 cup shredded mozzarella cheese
  • 1/2 cup crumbled feta cheese
  • 1 small tomato (diced)
  • 1/4 cup red onion (thinly sliced)
  • 1 tablespoon olive oil
  • Black pepper (to taste)

Instructions

  1. In a mixing bowl, combine the mozzarella cheese, feta cheese, spinach, tomato, red onion, and black pepper. Mix well.
  2. Lay one tortilla on a clean surface and place one-fourth of the filling on one half. Fold the other half over the filling.
  3. Heat a non-stick skillet over medium heat and add olive oil to coat the bottom.
  4. Place the filled tortilla in the skillet and cook for 3-4 minutes until golden brown and crispy.
  5. Flip the quesadilla and cook for another 3-4 minutes until both sides are golden and crisp.
  6. Remove from heat, slice into wedges, and serve warm.

Notes

Serve with salsa, guacamole, or tzatziki for added flavor. Store leftovers in an airtight container in the fridge for up to 3 days.
