Description
Crispy, golden bites loaded with tender spinach, tangy feta, and Mediterranean herbs perfect as an appetizer, snack, or party finger food.
Ingredients
2 cups fresh spinach, finely chopped
1/2 cup crumbled feta cheese
1/3 cup grated parmesan cheese
1/2 cup all-purpose flour
1/2 tsp baking powder
1/2 tsp garlic powder
1/2 tsp dried oregano
1/4 tsp black pepper
1/4 tsp salt
1 large egg
1/3 cup milk
2 tbsp olive oil
Instructions
1. Preheat oven to 375°F (190°C) and line a baking sheet with parchment paper.
2. In a large bowl, combine chopped spinach, feta, and parmesan cheese.
3. In a separate bowl, whisk together flour, baking powder, garlic powder, oregano, salt, and pepper.
4. Add dry ingredients to the spinach mixture and stir to combine.
5. Whisk egg, milk, and olive oil together, then add to the mixture.
6. Stir until a thick batter forms.
7. Spoon small mounds of batter onto the prepared baking sheet, flattening slightly.
8. Bake for 15–18 minutes until edges are crisp and tops are lightly golden.
9. Cool for a few minutes before serving.
Notes
Serve with tzatziki or hummus for dipping.
These crisps are best enjoyed warm and fresh.
You can substitute dill or basil for oregano for a different herb profile.
