Description

Ingredients

  • 2 ripe avocados
  • 1 cup charred corn (fresh or canned)
  • 1/2 cup cotija cheese, crumbled
  • 1 lime, juiced
  • 1/2 teaspoon chili powder
  • Salt to taste
  • 4 slices of crusty bread
  • Fresh cilantro (for garnish, optional)

Instructions

  1. Toast the bread until golden brown.
  2. Prepare the avocado mixture by mashing the avocados and mixing in lime juice, salt, and chili powder.
  3. Spread the mashed avocado on each slice of toast.
  4. Add the charred corn on top of the avocado.
  5. Sprinkle cotija cheese over each slice.
  6. Garnish with fresh cilantro and serve immediately.
