Description

Indulge in these rich, bite-sized mini cheesecakes with a chocolate twist, perfect for gatherings and special occasions.


Ingredients

  • 1 package Oreo cookies
  • 2 tablespoons unsalted butter, melted
  • 16 ounces cream cheese, softened
  • 1 cup sugar
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup chocolate chips
  • 1 cup heavy cream

Instructions

  1. Preheat your oven to 325°F (160°C).
  2. Crush the Oreo cookies and mix them with the melted butter until well combined. Press this mixture into the bottom of cupcake liners placed in a muffin tin.
  3. Beat the cream cheese and sugar together until creamy and smooth.
  4. Add the eggs one at a time, mixing well after each addition.
  5. Toss in the vanilla extract and give it a good mix.
  6. Fold in the chocolate chips, ensuring they’re evenly distributed.
  7. Divide the cream cheese mixture over the Oreo crusts in the muffin tin.
  8. Bake for 20-25 minutes until set.
  9. Let them cool for a bit, then pop them in the fridge for at least 2 hours.
  10. Heat the heavy cream in a saucepan over low heat until it just begins to simmer.
  11. Pour it over the chocolate chips and stir until it’s smooth and glossy.
  12. Pour the ganache over the top of each cheesecake.
  13. Serve and enjoy your delicious creation!

Notes

For better texture, use room temperature cream cheese. Ensure to chill properly and do not overmix the batter.
