These Mini Peanut Butter Cup Cheesecakes are creamy, rich, and the perfect blend of sweetness with a salty kick of peanut butter. Simple to make and sure to impress any guest at your gathering.

- 1 cup crushed graham crackers
- 1/4 cup sugar
- 1/2 cup unsalted butter, melted
- 16 oz cream cheese, softened
- 1 cup peanut butter
- 1 cup powdered sugar
- 1 tsp vanilla extract
- 12 mini peanut butter cups, chopped
- Whipped cream (for topping)
Instructions
- Preheat your oven to 325°F (163°C) and line a muffin tin with paper liners.
- Combine the crushed graham crackers, sugar, and melted butter in a bowl. Mix well and press into the bottom of each muffin liner to create the crust.
- Beat together the softened cream cheese, peanut butter, powdered sugar, and vanilla extract in a large bowl until smooth and creamy.
- Fold in the chopped mini peanut butter cups.
- Spoon the cheesecake mixture over the crusts in the muffin tin, filling each liner about 3/4 full.
- Bake for 15-20 minutes until firm but slightly jiggly in the center.
- Allow to cool, then refrigerate for at least 2 hours to set.
- Serve topped with whipped cream and an extra sprinkle of mini peanut butter cups.
Notes
Don’t skip the chilling time for best results. You can experiment with different peanut butters for unique flavors.
