- 260 g cookies (mix plain and chocolate)
- 120 g unsalted butter (melted)
- ⅓ cup hot water
- 4 tsp gelatin (powder)
- 500 g cream cheese (softened)
- ¾ cup powdered sugar
- ½ cup warm coffee
- 1 tsp vanilla extract
- 450 ml heavy cream
- 12 ladyfingers (sponge finger biscuits)
- 1½ cups cold coffee
- 300 g dark chocolate (chopped)
- 200 g heavy cream
- ½ tbsp cocoa powder (for dusting)
- 6 wafer rolls (picollo)
Instructions
- Make the Biscuit Base: Crush the cookies into fine crumbs and mix with melted butter. Press into a cupcake tray lined with baking cups and chill.
- Prepare Coffee Cheesecake Filling: Dissolve gelatin in hot water. Beat cream cheese and powdered sugar, mix in coffee and vanilla, fold in heavy cream, and add gelatin mixture. Spoon half onto chilled base.
- Layer Ladyfingers: Dip ladyfingers in cold coffee, place in cupcake liners, add remaining filling, cover with plastic wrap, and freeze for at least 6 hours.
- Make Ganache Truffle Balls: Heat heavy cream and pour over chopped dark chocolate, stir until smooth, cool, and refrigerate until firm.
- Garnish and Serve: Remove cheesecakes from molds, top with ganache truffle balls and cocoa powder, garnish with wafer rolls, and chill for 2 hours.
