Mushroom Stuffed Chicken Breast

A comforting meal of chicken breasts stuffed with a creamy, cheesy mushroom filling, perfect for any occasion.


Ingredients

  • 4 chicken breasts
  • 1 cup mushrooms, finely chopped
  • 1/2 cup cream cheese, softened
  • 1/2 cup shredded mozzarella cheese
  • 2 cloves garlic, minced
  • 1/4 cup parsley, chopped
  • Salt and pepper to taste
  • Olive oil for cooking

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Heat a drizzle of olive oil in your skillet over medium heat. Toss in the minced garlic and chopped mushrooms and sauté for about 5-7 minutes.
  3. Transfer the sautéed mushrooms into a mixing bowl. Add cream cheese, mozzarella, parsley, salt, and pepper and mix until creamy.
  4. Cut a pocket in each chicken breast without slicing all the way through.
  5. Fill each pocket generously with the mushroom filling.
  6. Place the stuffed chicken breasts in a baking dish, drizzle with olive oil.
  7. Bake for 25-30 minutes until the chicken reaches an internal temperature of 165°F.
  8. Let it rest for a few minutes before serving.

Notes

Let the chicken rest after baking to keep it juicy. Avoid overstuffing the chicken pockets.
