- 4 chicken breasts
- 1 cup mushrooms, finely chopped
- 1/2 cup cream cheese, softened
- 1/2 cup shredded mozzarella cheese
- 2 cloves garlic, minced
- 1/4 cup parsley, chopped
- Salt and pepper to taste
- Olive oil for cooking
Instructions
- Preheat your oven to 375°F (190°C).
- Heat a drizzle of olive oil in your skillet over medium heat. Toss in the minced garlic and chopped mushrooms and sauté for about 5-7 minutes.
- Transfer the sautéed mushrooms into a mixing bowl. Add cream cheese, mozzarella, parsley, salt, and pepper and mix until creamy.
- Cut a pocket in each chicken breast without slicing all the way through.
- Fill each pocket generously with the mushroom filling.
- Place the stuffed chicken breasts in a baking dish, drizzle with olive oil.
- Bake for 25-30 minutes until the chicken reaches an internal temperature of 165°F.
- Let it rest for a few minutes before serving.
