Ingredients

- 14 oz firm tofu, cubed
- 8 oz mushrooms, sliced
- 2 cups mixed vegetables (e.g., bell peppers, broccoli, snap peas)
- 3 cloves garlic, minced
- 1 inch ginger, grated
- 3 tablespoons soy sauce
- 2 tablespoons vegetable oil
- Salt and pepper to taste
- Cooked rice or noodles for serving
Instructions
- Heat the vegetable oil in a skillet or wok over medium-high heat.
- Add the cubed tofu, season with salt and pepper, and cook until golden brown on all sides for about 5-7 minutes.
- Toss in the minced garlic and grated ginger; sauté for 1 minute until fragrant.
- Add the sliced mushrooms and mixed vegetables; stir-fry for 3-5 minutes until the vegetables are tender.
- Pour in the soy sauce and mix well, cooking for another 2 minutes.
- Serve hot over cooked rice or noodles, garnished with green onions or sesame seeds if desired.
Notes
Press the tofu before cooking to remove excess water for a crispier texture. Customize mixed vegetables based on preference. Add red pepper flakes for spice.
