Description

A quick and flavorful stir-fry featuring tender chicken, crisp broccoli, and earthy mushrooms, perfect for busy weeknights.


Ingredients

  • 500g chicken breast, diced
  • 2 cups broccoli florets
  • 2 cups mushrooms, sliced
  • 1 small onion, chopped
  • 2 garlic cloves, minced
  • 2 tbsp soy sauce
  • 1 tbsp sesame oil
  • 1 tbsp olive oil
  • 1 tsp cornstarch
  • 2 tbsp water (for slurry)
  • Salt and pepper to taste

Instructions

  1. Cook the rice according to package instructions and set it aside.
  2. Heat the olive oil in a large skillet or wok over medium-high heat.
  3. Sauté the diced chicken with a sprinkle of salt and pepper until cooked through, about 5-7 minutes. Once it’s cooked, remove the chicken and set it aside on a plate.
  4. In the same pan, add the sesame oil, onions, and garlic, sautéing until fragrant, which should take about 1-2 minutes.
  5. Add the broccoli and mushrooms, cooking until they are tender-crisp.
  6. Return the cooked chicken to the pan, then pour in the soy sauce, spreading it evenly.
  7. Prepare the cornstarch slurry by mixing cornstarch with water in a small bowl. Stir this slurry into the pan until the sauce thickens slightly.
  8. Serve the stir-fry hot over the cooked rice, and enjoy!

Notes

Can be served with quinoa or cauliflower rice for a lower-carb option.
