A quick and flavorful stir-fry featuring tender chicken, crisp broccoli, and earthy mushrooms, perfect for busy weeknights.

- 500g chicken breast, diced
- 2 cups broccoli florets
- 2 cups mushrooms, sliced
- 1 small onion, chopped
- 2 garlic cloves, minced
- 2 tbsp soy sauce
- 1 tbsp sesame oil
- 1 tbsp olive oil
- 1 tsp cornstarch
- 2 tbsp water (for slurry)
- Salt and pepper to taste
Instructions
- Cook the rice according to package instructions and set it aside.
- Heat the olive oil in a large skillet or wok over medium-high heat.
- Sauté the diced chicken with a sprinkle of salt and pepper until cooked through, about 5-7 minutes. Once it’s cooked, remove the chicken and set it aside on a plate.
- In the same pan, add the sesame oil, onions, and garlic, sautéing until fragrant, which should take about 1-2 minutes.
- Add the broccoli and mushrooms, cooking until they are tender-crisp.
- Return the cooked chicken to the pan, then pour in the soy sauce, spreading it evenly.
- Prepare the cornstarch slurry by mixing cornstarch with water in a small bowl. Stir this slurry into the pan until the sauce thickens slightly.
- Serve the stir-fry hot over the cooked rice, and enjoy!
Notes
Can be served with quinoa or cauliflower rice for a lower-carb option.
