Ingredients

  • 9 lasagna noodles
  • 2 cups ricotta cheese
  • 2 cups shredded mozzarella cheese
  • 1 cup grated Parmesan cheese
  • 2 cups spinach, chopped
  • 1 zucchini, sliced
  • 1 bell pepper, diced
  • 2 cups marinara sauce
  • 2 tablespoons olive oil
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Cook the lasagna noodles according to package instructions; drain and set aside.
  3. Heat olive oil in a skillet and sauté zucchini and bell pepper until tender.
  4. Mix ricotta cheese, spinach, oregano, basil, salt, and pepper in a bowl.
  5. Spread a thin layer of marinara sauce on the bottom of a baking dish.
  6. Layer 3 lasagna noodles, followed by half the ricotta mixture, half the vegetable mixture, and a third of the marinara sauce.
  7. Repeat the layers, ending with noodles and the remaining marinara sauce on top.
