- 1 1/2 cups graham cracker crumbs
- 1/2 cup unsalted butter, melted
- 3 cups heavy cream, divided
- 1 cup creamy peanut butter
- 1 cup powdered sugar
- 1 teaspoon vanilla extract
- 1 cup semi-sweet chocolate chips
Instructions
- Mix together the graham cracker crumbs and melted butter in a bowl.
- Press the mixture firmly into the bottom of a 9-inch springform pan and chill.
- Whip 1 1/2 cups of heavy cream until stiff peaks form.
- Mix the peanut butter, powdered sugar, and vanilla extract until smooth.
- Fold the whipped cream into the peanut butter mixture gently.
- Pour the peanut butter mousse over the graham cracker crust and smooth it out.
- Heat the remaining heavy cream until boiling and stir in the chocolate chips until smooth.
- Pour the ganache over the peanut butter layer.
- Cover and refrigerate for at least 4 hours or overnight.
- Slice and serve, garnishing with whipped cream and chopped peanuts if desired.
