- 1/2 cup nut butter (such as almond or peanut)
- 1/3 cup honey or maple syrup
- 1/4 cup ground flaxseed
- 1/2 cup chocolate chips or dried fruit (optional)
- 1 tsp vanilla extract
Instructions
- In a large bowl, mix together the oats, nut butter, honey (or maple syrup), ground flaxseed, and vanilla extract.
- If you’re feeling indulgent, stir in the chocolate chips or dried fruit.
- Once well combined, use your hands to form the mixture into small balls—aim for about 1 inch in diameter.
- Place the energy bites on a baking sheet lined with parchment paper.
- Refrigerate them for at least 30 minutes to set.
- Store the bites in an airtight container in the fridge for up to a week or freeze for longer storage.
Notes
For a nut-free option, use sunflower seed butter. You can also add cocoa powder for a chocolate flavor or chia seeds for more nutrition.
