Ingredients

- 1 cup shredded coconut
- 1/2 cup coconut cream
- 1/4 cup maple syrup
- 1/2 cup dark chocolate chips
- 1/4 cup coconut oil
- 1/4 teaspoon vanilla extract
Instructions
- In a bowl, mix the shredded coconut, coconut cream, maple syrup, and vanilla extract until well combined.
- In another bowl, melt the dark chocolate chips and coconut oil together until smooth.
- Line a muffin tin with cupcake liners.
- Spoon the coconut mixture into each liner, filling them halfway and packing it down gently.
- Pour the melted chocolate over the coconut layer, filling to the top.
- Refrigerate for at least 60 minutes until set.
- Once set, remove from the liners and enjoy your No-Bake Vegan Coconut Cups!
