Description

Delightful no-bake vegan coconut cups filled with luscious coconut flavor and rich chocolate.


Ingredients

  • 1 cup shredded coconut
  • 1/2 cup coconut cream
  • 1/4 cup maple syrup
  • 1/2 cup dark chocolate chips
  • 1/4 cup coconut oil
  • 1/4 teaspoon vanilla extract

Instructions

  1. In a bowl, mix the shredded coconut, coconut cream, maple syrup, and vanilla extract until well combined.
  2. In another bowl, melt the dark chocolate chips and coconut oil together until smooth.
  3. Line a muffin tin with cupcake liners.
  4. Spoon the coconut mixture into each liner, filling them halfway and packing it down gently.
  5. Pour the melted chocolate over the coconut layer, filling to the top.
  6. Refrigerate for at least 60 minutes until set.
  7. Once set, remove from the liners and enjoy your No-Bake Vegan Coconut Cups!
