- 1 cup rolled oats
- 1 cup applesauce
- 1 ripe banana, mashed
- 1/2 cup milk (or non-dairy milk)
- 1 tsp baking powder
- 1/2 tsp cinnamon
- 1/4 cup honey or maple syrup (optional)
- 1/2 cup diced apples
Instructions
- Preheat your oven to 350°F (175°C). Line a muffin tin with paper liners or grease it.
- Combine the rolled oats, applesauce, mashed banana, milk, baking powder, cinnamon, and sweetener in a mixing bowl. Stir until smooth.
- Fold in the diced apples until evenly dispersed.
- Spoon the batter into your muffin tin, filling each cup about 2/3 full.
- Bake for 15-20 minutes, or until a toothpick comes out clean.
- Let cool for a few minutes before transferring to a wire rack.
Notes
Serve with nut butter or yogurt for added nutrition. Store in an airtight container for up to three days or freeze for up to three months.
