A deliciously sweet and nutty granola made with honey, cinnamon, and a variety of nuts perfect for breakfast or snacking.

- 1 cup raw almonds
- 1 cup raw cashews
- 1/3 cup raw pumpkin seeds
- 1/3 cup raw sunflower seeds
- 1/4 cup unsweetened coconut flakes
- 1/4 cup virgin coconut oil
- 1/3 cup organic honey
- 1 tsp. pure vanilla extract
- Pinch of sea salt
- 2 tsp. ground cinnamon
- 3/4 cup dried cranberries or cherries
Instructions
- Preheat your oven to 275°F.
- Add the almonds, cashews, and coconut flakes to a food processor or blender, and chop into small pieces.
- Heat the coconut oil, honey, cinnamon, and sea salt in a large saucepan over medium-high heat for 3-5 minutes until melted and combined.
- Remove the saucepan from heat and stir in the vanilla extract.
- Add the chopped nuts and seeds to the saucepan, mixing well to coat them.
- Spread the granola mixture on a parchment-lined baking sheet in a single layer.
- Bake for 20-25 minutes until lightly browned, watching closely to prevent burning.
- Stir in the dried cranberries or cherries once baked, pressing them into the mixture.
- Allow the granola to cool for about 20 minutes before breaking it into clusters.
- Store in an airtight container for up to 2 weeks.
