Description

A deliciously sweet and nutty granola made with honey, cinnamon, and a variety of nuts perfect for breakfast or snacking.


Ingredients

  • 1 cup raw almonds
  • 1 cup raw cashews
  • 1/3 cup raw pumpkin seeds
  • 1/3 cup raw sunflower seeds
  • 1/4 cup unsweetened coconut flakes
  • 1/4 cup virgin coconut oil
  • 1/3 cup organic honey
  • 1 tsp. pure vanilla extract
  • Pinch of sea salt
  • 2 tsp. ground cinnamon
  • 3/4 cup dried cranberries or cherries

Instructions

  1. Preheat your oven to 275°F.
  2. Add the almonds, cashews, and coconut flakes to a food processor or blender, and chop into small pieces.
  3. Heat the coconut oil, honey, cinnamon, and sea salt in a large saucepan over medium-high heat for 3-5 minutes until melted and combined.
  4. Remove the saucepan from heat and stir in the vanilla extract.
  5. Add the chopped nuts and seeds to the saucepan, mixing well to coat them.
  6. Spread the granola mixture on a parchment-lined baking sheet in a single layer.
  7. Bake for 20-25 minutes until lightly browned, watching closely to prevent burning.
  8. Stir in the dried cranberries or cherries once baked, pressing them into the mixture.
  9. Allow the granola to cool for about 20 minutes before breaking it into clusters.
  10. Store in an airtight container for up to 2 weeks.

Keep a close eye on the granola while baking to prevent burning. Customize nuts based on your preferences and ensure to press it down before cooling for better clustering.
