  • 1/2 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 2 large eggs

  • 1/2 cup peach puree
  • 1 cup powdered sugar
  • 1/2 cup unsalted butter, softened (for frosting)
  • 2 tablespoons heavy cream
  • Fresh peach slices (for garnish)
  • Sparkling sugar (for garnish)

Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with cupcake liners.
  2. Whisk together the flour, baking powder, and salt until well combined.
  3. Beat together the softened butter and granulated sugar until light and fluffy. Add the eggs one at a time, mixing well after each addition, then stir in the vanilla extract.
  4. Gradually add the dry ingredients to the wet ingredients, alternating with the champagne and peach puree. Start and end with the dry ingredients, mixing just until blended.
  5. Fill the cupcake liners about two-thirds full with batter.
  6. Bake for 18-20 minutes or until a toothpick inserted in the center comes out clean. Let them cool completely in the pan.
  7. Beat together the softened butter and powdered sugar until creamy. Add the heavy cream and beat until smooth and fluffy.
  8. Frost each cupcake with the peach buttercream once cooled.
  9. Garnish with fresh peach slices and a sprinkle of sparkling sugar before serving.

Notes

Mix the batter just until combined to avoid dense cupcakes. Use room temperature ingredients for better texture.
