- 1 1/2 teaspoons baking powder
- 1/4 teaspoon salt
- 1/2 cup unsalted butter, softened
- 1 cup granulated sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 1/2 cup champagne
- 1/2 cup peach puree
- 1 cup powdered sugar
- 1/2 cup unsalted butter, softened (for frosting)
- 2 tablespoons heavy cream
- Fresh peach slices (for garnish)
- Sparkling sugar (for garnish)
Instructions
- Preheat your oven to 350°F (175°C) and line a muffin tin with cupcake liners.
- Whisk together the flour, baking powder, and salt until well combined.
- Beat together the softened butter and granulated sugar until light and fluffy. Add the eggs one at a time, mixing well after each addition, then stir in the vanilla extract.
- Gradually add the dry ingredients to the wet ingredients, alternating with the champagne and peach puree. Start and end with the dry ingredients, mixing just until blended.
- Fill the cupcake liners about two-thirds full with batter.
- Bake for 18-20 minutes or until a toothpick inserted in the center comes out clean. Let them cool completely in the pan.
- Beat together the softened butter and powdered sugar until creamy. Add the heavy cream and beat until smooth and fluffy.
- Frost each cupcake with the peach buttercream once cooled.
- Garnish with fresh peach slices and a sprinkle of sparkling sugar before serving.
Notes
Mix the batter just until combined to avoid dense cupcakes. Use room temperature ingredients for better texture.
