- 2 tablespoons virgin coconut oil
- 3 tablespoons maple syrup or honey
- 1 teaspoon pure vanilla extract
- 2¼ cups old-fashioned oats
- ¼ cup unsweetened shredded coconut
- ¼ cup ground flaxseed
- 1 tablespoon chia seeds
- Pinch of fine salt
- 1/3 cup mini chocolate chips
Instructions
- Pulse the oats in a food processor 10-15 times, if you prefer a smoother texture.
- Combine oats, coconut flakes, ground flaxseed, chia seeds, and salt in a medium bowl.
- Add the peanut butter, coconut oil, maple syrup, and vanilla extract, then mix well.
- Fold in the mini chocolate chips.
- Roll the mixture into 26-28 small round bites. If the mixture seems crumbly, add water teaspoon by teaspoon until it holds together.
- Store the bites in an airtight container in the refrigerator for up to one week or freeze for up to three months.
