Ingredients

  • 2 tablespoons virgin coconut oil
  • 3 tablespoons maple syrup or honey
  • 1 teaspoon pure vanilla extract
  • 2¼ cups old-fashioned oats
  • ¼ cup unsweetened shredded coconut
  • ¼ cup ground flaxseed
  • 1 tablespoon chia seeds
  • Pinch of fine salt
  • 1/3 cup mini chocolate chips

Instructions

  1. Pulse the oats in a food processor 10-15 times, if you prefer a smoother texture.
  2. Combine oats, coconut flakes, ground flaxseed, chia seeds, and salt in a medium bowl.
  3. Add the peanut butter, coconut oil, maple syrup, and vanilla extract, then mix well.
  4. Fold in the mini chocolate chips.
  5. Roll the mixture into 26-28 small round bites. If the mixture seems crumbly, add water teaspoon by teaspoon until it holds together.
  6. Store the bites in an airtight container in the refrigerator for up to one week or freeze for up to three months.
