A creamy and tangy potato salad enhanced with crunchy radishes, fresh herbs, and a touch of lemon for a refreshing twist.
Ingredients

- 4 dl Creme fraiche
- 1 dl chopped chives
- 1 dl chopped fresh dill
- 2 teaspoons Dijon mustard
- 2 teaspoons freshly squeezed lemon juice
- 2 teaspoons coarse salt
- Freshly ground pepper to taste
- 1 kg small new potatoes, cooked and cooled
- 100 g radishes, thinly sliced
- 100 g fresh peas
- Dill sprigs and chopped chives for garnish
Instructions
- In a mixing bowl, combine the creme fraiche, chopped chives, dill, Dijon mustard, lemon juice, coarse salt, and freshly ground pepper. Whisk until smooth.
- Gently fold in the cooked and cooled potatoes, making sure to coat them without mashing.
- Add the sliced radishes and fresh peas, folding them into the salad.
- Transfer the salad to a serving bowl and cover it. Chill in the fridge for at least 30 minutes before serving.
- Garnish with dill sprigs and finely chopped chives.
Notes
Use fresh herbs for the best flavor and be careful not to overcook the potatoes.
