Ingredients

  • 6 large eggs
  • 1/4 cup mayonnaise
  • 1 teaspoon mustard
  • 1 teaspoon vinegar
  • Salt and pepper to taste
  • Beet juice or pickled beet juice for coloring
  • Paprika for garnish

Instructions

  1. Hard boil the eggs. Place the eggs in a pot and cover them with cold water. Bring the water to a boil, then reduce the heat and let it simmer for 10-12 minutes. Once cooked, cool the eggs under cold running water or in an ice bath. Peel them carefully to avoid any cracks.
  2. Slice and remove. Cut the eggs in half lengthwise and gently remove the yolks. Don’t worry if some of the whites crack; they’ll still look great once filled!
  3. Mash the yolks. Place the yolks in a mixing bowl and mash them with a fork until they’re fine and crumbly.
  4. Mix the filling. Add the mayonnaise, mustard, vinegar, and season with salt and pepper. Mix everything together until it’s creamy and cohesive. Don’t forget to taste and adjust the seasoning if needed!
  5. Add beet juice. Here’s the fun part! Drizzle in some beet juice to the yolk mixture until you achieve the desired shade of pink. You can always add more if you want a bolder color.
  6. Fill the egg whites. Scoop the yolk mixture back into the egg whites. You can use a spoon or a piping bag for that professional touch.
  7. Garnish. Lastly, sprinkle a touch of paprika over the top for that classic garnish. Serve them right away or refrigerate for later enjoyment.

Notes

Use fresh eggs for easier peeling and better taste. Control the cooking temperature to avoid greenish yolks.
