Description

Ingredients

  • 1/2 cup unsalted butter
  • 1 cup powdered sugar
  • 2 large eggs
  • 2 large egg yolks
  • 1 teaspoon vanilla extract
  • 1/2 cup all-purpose flour
  • 1 cup fresh raspberries

Instructions

  1. Preheat your oven to 425°F (220°C) and grease a muffin tin.
  2. Melt the chocolate chips and butter together in a microwave-safe bowl until smooth.
  3. Add the powdered sugar and mix until fully incorporated.
  4. Whisk in the eggs, egg yolks, and vanilla extract.
  5. Fold in the flour until just combined.
  6. Spoon the batter into the muffin cups, filling them halfway and adding raspberries.
  7. Cover the raspberries with more batter until the cups are nearly full.
  8. Bake for 12-14 minutes until edges are firm but center remains soft.
  9. Let cupcakes cool for 1 minute, then invert onto plates and serve warm.
