Description

A light and fresh salad combining bulgur wheat, fresh herbs, and zesty lemon, perfect for summer gatherings.


Ingredients

  • 1 cup bulgur wheat
  • 2 cups water
  • 1 cup diced tomatoes
  • 1 cup diced English cucumbers
  • 1 cup chopped parsley
  • 1/2 cup chopped fresh mint
  • 1/4 cup olive oil
  • 2 lemons (juiced)
  • Salt and pepper to taste

Instructions

  1. Rinse the bulgur wheat under cold water, then soak it in 2 cups of water for about 30 minutes until it’s tender. Drain any excess water.
  2. In a large bowl, combine the diced tomatoes, cucumbers, parsley, and mint.
  3. Fluff the bulgur wheat with a fork and add it to the bowl with the vegetables. Toss everything together to blend flavors.
  4. Drizzle with olive oil and lemon juice, then season with salt and pepper to taste, adjusting as needed.
  5. Mix until well combined.
  6. Let the salad chill in the refrigerator for at least 30 minutes before serving to allow flavors to meld.

Notes

Serve as a light lunch or as a side dish with grilled meats. Garnish with extra mint leaves or pomegranate seeds for added flair.
