Ingredients

- 1 cup bulgur wheat
- 2 cups water
- 1 cup diced tomatoes
- 1 cup diced English cucumbers
- 1 cup chopped parsley
- 1/2 cup chopped fresh mint
- 1/4 cup olive oil
- 2 lemons (juiced)
- Salt and pepper to taste
Instructions
- Rinse the bulgur wheat under cold water, then soak it in 2 cups of water for about 30 minutes until it’s tender. Drain any excess water.
- In a large bowl, combine the diced tomatoes, cucumbers, parsley, and mint.
- Fluff the bulgur wheat with a fork and add it to the bowl with the vegetables. Toss everything together to blend flavors.
- Drizzle with olive oil and lemon juice, then season with salt and pepper to taste, adjusting as needed.
- Mix until well combined.
- Let the salad chill in the refrigerator for at least 30 minutes before serving to allow flavors to meld.
Notes
Serve as a light lunch or as a side dish with grilled meats. Garnish with extra mint leaves or pomegranate seeds for added flair.
