Description

Ingredients

1/2 cup unsalted butter, softened

3/4 cup granulated sugar

1 cup whole milk ricotta cheese

1 large egg

1 tsp almond extract

1 tsp vanilla extract

2 1/4 cups all-purpose flour

1 tsp baking powder

1/4 tsp salt

1/2 cup powdered sugar (for dusting)


Instructions

1. Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.

2. In a large bowl, cream butter and granulated sugar until light and fluffy.

3. Mix in ricotta cheese until smooth.

4. Beat in egg, almond extract, and vanilla extract.

5. In a separate bowl, whisk together flour, baking powder, and salt.

6. Gradually add dry ingredients to the wet mixture until a soft dough forms.

7. Drop rounded tablespoons of dough onto the prepared baking sheet, spacing evenly.

8. Bake for 14–16 minutes until set but not browned.

9. Allow cookies to cool completely, then dust generously with powdered sugar before serving.

Notes

Do not overbake — these cookies should stay pale and soft.

Whole milk ricotta gives the best texture and flavor.
