- 1½ lbs Jumbo or large shrimp
- 16 ounces angel hair pasta
- 5 to 6 cloves garlic, minced
- 2 tbsp butter
- 2 tbsp olive oil
- ½ cup grated parmesan cheese
- 1 cup fresh spinach leaves
- Juice from 2 lemons
- Salt and pepper to taste
Instructions
- Begin by bringing a large pot of salted water to a boil.
- Once boiling, add the angel hair pasta and cook for about 4-5 minutes, stirring occasionally until al dente. Drain and set aside, reserving 1 cup of pasta water.
- In a large skillet over medium heat, combine butter and olive oil.
- Add minced garlic and stir for 30 seconds until fragrant.
- Toss in the shrimp and cook for 2-3 minutes per side until pink and opaque.
- Squeeze in lemon juice, adding salt and pepper to taste.
- Add the cooked pasta to the skillet and toss with shrimp and garlic butter, adding reserved pasta water until desired sauce consistency is reached.
- Stir in spinach and parmesan until spinach wilts and cheese melts.
- Serve garnished with extra parmesan, parsley, and lemon wedges on the side.
