Ingredients

  • lbs Jumbo or large shrimp
  • 16 ounces angel hair pasta
  • 5 to 6 cloves garlic, minced
  • 2 tbsp butter
  • 2 tbsp olive oil
  • ½ cup grated parmesan cheese
  • 1 cup fresh spinach leaves
  • Juice from 2 lemons
  • Salt and pepper to taste

Instructions

  1. Begin by bringing a large pot of salted water to a boil.
  2. Once boiling, add the angel hair pasta and cook for about 4-5 minutes, stirring occasionally until al dente. Drain and set aside, reserving 1 cup of pasta water.
  3. In a large skillet over medium heat, combine butter and olive oil.
  4. Add minced garlic and stir for 30 seconds until fragrant.
  5. Toss in the shrimp and cook for 2-3 minutes per side until pink and opaque.
  6. Squeeze in lemon juice, adding salt and pepper to taste.
  7. Add the cooked pasta to the skillet and toss with shrimp and garlic butter, adding reserved pasta water until desired sauce consistency is reached.
  8. Stir in spinach and parmesan until spinach wilts and cheese melts.
  9. Serve garnished with extra parmesan, parsley, and lemon wedges on the side.
