Ingredients

  • 140 g brown sugar
  • 3 tablespoons rapeseed oil
  • 2 eggs
  • 250 g rice flour (or wheat or spelt flour)
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 60 g unsweetened cocoa powder
  • 1/4 liter milk
  • 200 g couverture chocolate
  • 1 tablespoon rapeseed oil (for melting chocolate)
  • White chocolate sprinkles or other sprinkles for decoration

Instructions

  1. Preheat your oven to 175°C (350°F) with the top/bottom heat setting on. Grease a donut pan for 12 donuts.
  2. Beat the brown sugar, oil, and eggs together until light and fluffy.
  3. Combine the rice flour, baking powder, baking soda, and cocoa powder in another bowl.
  4. Whisk the dry ingredients into the egg mixture, alternating with the milk, until you achieve a smooth batter.
  5. Fill the donut cavities about two-thirds full with the batter.
  6. Bake for about 13 minutes. Check doneness with a toothpick.
  7. Allow the donuts to cool in the pan for a few minutes before transferring to a wire rack.
  8. Melt the couverture chocolate with a tablespoon of rapeseed oil, then dip the cooled donuts in chocolate and add sprinkles.

Notes
