Ingredients

- 1 pound shrimp (fresh or frozen)
- 1/4 cup olive oil
- 2 tablespoons lemon juice
- 3 cloves garlic, minced
- 1 teaspoon paprika
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- 1 tablespoon fresh parsley, chopped (optional)
Instructions
- Whisk together the olive oil, lemon juice, minced garlic, paprika, salt, and pepper.
- Add the shrimp to the marinade and toss to coat evenly.
- Allow the shrimp to marinate for at least 15-30 minutes.
- Preheat your grill to medium-high heat.
- Thread the marinated shrimp onto skewers.
- Grill the skewers for about 2-3 minutes on each side.
- Garnish with fresh parsley and serve hot.
Notes
Serve with a salad, garlic butter rice, or on a bed of quinoa. A squeeze of fresh lemon juice adds brightness.
