Ingredients

  • 3 tablespoons butter (divided)
  • 2 small zucchini (cut into thin, half-moon slices)
  • Salt and black pepper (to taste)
  • 1 small yellow onion (finely diced)
  • 1 pound small button mushrooms (cleaned and patted dry)
  • 3 to 4 cloves garlic (minced)
  • 2 teaspoons fresh chopped herbs (or use 1 teaspoon dried herbs such as thyme and oregano)
  • ¼ cup vegetable broth
  • Chopped fresh parsley (for garnish)
  • Grated Parmesan (for garnish)

Instructions

  1. Heat olive oil and 1/2 tablespoon of butter in a large skillet over medium-high heat.
  2. Add the zucchini slices, season them with salt and pepper, and cook for about 3 to 4 minutes until they’re fork-tender. Once ready, set them aside.
  3. Return the skillet to the heat and melt the remaining butter. Sauté the diced onions for roughly 2 minutes until they become slightly translucent.
  4. Add in the mushrooms and cook for about 5 to 7 minutes until they turn golden brown.
  5. Stir in the minced garlic and herbs, cooking for an additional 20 seconds until you start to smell that delicious aroma.
  6. Return the zucchini to the skillet, mixing it well with the mushrooms, and heat for another minute.
  7. Pour in the vegetable broth, cooking for an additional 2 minutes to allow the flavors to merge.
  8. Adjust seasoning with salt and pepper. Finally, garnish with parsley and Parmesan before serving.

Notes

Do not overcrowd the skillet to ensure proper caramelization. Fresh herbs elevate the flavor, and you can substitute with other veggies or proteins as desired.
