Description

Delicious and nutritious Snickers Energy Balls made with peanut butter, Medjool dates, and chocolate chips, perfect for a quick snack.


Ingredients

Scale
  • 1 cup Rolled oats
  • 1 cup Medjool dates
  • 1/2 cup Peanut butter
  • 1/4 cup Honey
  • 1 cup Salted peanuts, chopped
  • 1/2 cup Dark chocolate chips
  • 2 tablespoons Coconut oil
  • Pinch of Flaky sea salt

Instructions

  1. Combine Medjool dates, rolled oats, honey, and peanut butter in a food processor. Blend until smooth.
  2. Stir in chopped salted peanuts and dark chocolate chips.
  3. Roll portions of the mixture into balls, about the size of a golf ball, and place them on a baking sheet lined with parchment paper.
  4. Drizzle with melted coconut oil and sprinkle with flaky sea salt.
  5. Refrigerate for 30 minutes to firm up before serving.

Notes

Ensure Medjool dates are soft. You can substitute honey with maple syrup to make it vegan.
