Description

Ingredients

Instructions

  1. Cook the chicken breasts by boiling, grilling, or roasting them, then let cool and shred.
  2. Chop celery and onion finely while chicken cools.
  3. Combine shredded chicken, chopped celery, chopped onion, mayonnaise, and diced hard-boiled eggs in a large mixing bowl.
  4. Season with salt and pepper to taste, and mix well.
  5. Serve over bread for a sandwich or on lettuce for a lighter option.

Notes

For a quicker option, use rotisserie chicken. Adjust mayonnaise for desired creaminess.
