Instructions
- Cook the chicken breasts by boiling, grilling, or roasting them, then let cool and shred.
- Chop celery and onion finely while chicken cools.
- Combine shredded chicken, chopped celery, chopped onion, mayonnaise, and diced hard-boiled eggs in a large mixing bowl.
- Season with salt and pepper to taste, and mix well.
- Serve over bread for a sandwich or on lettuce for a lighter option.
Notes
For a quicker option, use rotisserie chicken. Adjust mayonnaise for desired creaminess.
