Ingredients

  • 8 oz linguine
  • 1 lb shrimp, peeled and deveined
  • 1 cup cherry tomatoes, halved
  • 4 cloves garlic, minced
  • 1/4 tsp red pepper flakes
  • 1/4 cup olive oil
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Cook the linguine according to package instructions until it’s al dente. Drain and set aside.
  2. Heat olive oil in a large skillet over medium heat. Add minced garlic and red pepper flakes, cooking until fragrant, about 1-2 minutes.
  3. Add the shrimp to the skillet, seasoning with salt and pepper. Cook until shrimp turns pink and opaque, about 3-4 minutes.
  4. Add halved cherry tomatoes to the skillet and sauté until they start to blister, about 2 minutes.
  5. Toss in the cooked linguine to coat with the flavors and adjust seasoning if needed.
  6. Garnish with fresh parsley before serving.

Notes

For added flavor, consider serving with freshly grated Parmesan cheese and a squeeze of lemon juice.
