Ingredients

- 2 cups fresh spinach
- 1 cup feta cheese, crumbled
- 1 cup mozzarella cheese, shredded
- 4 whole wheat tortillas
- Greek yogurt or tzatziki (for serving)
- Optional vegetables (sliced mushrooms, bell peppers)
Instructions
- Heat a pan over medium heat.
- Place a tortilla in the pan and layer it with fresh spinach, feta cheese, and mozzarella.
- Top with another tortilla and gently press down.
- Cook until the bottom is golden brown, then flip carefully and brown the other side, about 3-4 minutes on each side.
- Repeat with remaining tortillas and filling, keeping warm in a low oven.
- Cut the quesadillas into wedges and serve with Greek yogurt or tzatziki.
Notes
Add other vegetables or spices to customize your quesadillas. They’re great with a side salad or grilled vegetables.
