Description

A delicious and cheesy combination of spinach, feta, and mozzarella, wrapped in crispy tortillas, perfect for a quick meal.


Ingredients

  • 2 cups fresh spinach
  • 1 cup feta cheese, crumbled
  • 1 cup mozzarella cheese, shredded
  • 4 whole wheat tortillas
  • Greek yogurt or tzatziki (for serving)
  • Optional vegetables (sliced mushrooms, bell peppers)

Instructions

  1. Heat a pan over medium heat.
  2. Place a tortilla in the pan and layer it with fresh spinach, feta cheese, and mozzarella.
  3. Top with another tortilla and gently press down.
  4. Cook until the bottom is golden brown, then flip carefully and brown the other side, about 3-4 minutes on each side.
  5. Repeat with remaining tortillas and filling, keeping warm in a low oven.
  6. Cut the quesadillas into wedges and serve with Greek yogurt or tzatziki.

Notes

Add other vegetables or spices to customize your quesadillas. They’re great with a side salad or grilled vegetables.
