- 2 cups fresh spinach, chopped
- 1 can (15 oz) white beans, rinsed and drained
- 1 onion, chopped
- 2 cloves garlic, minced
- 4 cups vegetable broth
- 1 teaspoon olive oil
- Salt and pepper to taste
- Optional: lemon juice for serving
Instructions
- Heat the olive oil in a large pot over medium heat.
- Add the chopped onion and garlic, sauté until fragrant and the onion softens, about 3-4 minutes.
- Stir in the chopped spinach and cook until wilted, about 2-3 minutes.
- Add the white beans and vegetable broth, bring to a boil.
- Reduce the heat and let simmer for 15-20 minutes.
- Season with salt and pepper, and add a splash of lemon juice before serving.
Notes
Serve with slices of crusty artisan bread and a side salad for a complete meal. Leftovers can be stored in the fridge for 3-4 days or frozen for 2-3 months.
