Description

Ingredients

  • 2 tbsp extra virgin olive oil
  • 3 cloves garlic, minced
  • 1/2 onion, diced
  • 2 cups fresh spinach
  • 3 cage-free organic eggs
  • 1 slice havarti cheese
  • 1 tomato, sliced
  • Pinch sea salt
  • Pinch black pepper

Instructions

  1. Heat a nonstick frying pan over medium heat and add the olive oil. Allow it to warm up for about a minute.
  2. Toss in the diced onions and minced garlic, sautéing them for about 3 minutes until they’re soft and fragrant.
  3. Add the spinach to the pan. Let it cook until it wilts down, which should take about 2 minutes. Season it with a pinch of sea salt and black pepper to enhance the flavors.
  4. In a separate bowl, whisk together the eggs until they become a bit frothy. Pour the beaten eggs into the skillet over the sautéed veggies and let it cook for about 1 minute. Use a spatula to gently lift the edges, ensuring the omelette doesn’t stick.
  5. Place the slice of havarti cheese right in the center of the eggs. Fold the omelette carefully and let it cook for an additional minute.
  6. Gently flip the omelette and cook for another 30 seconds to ensure it’s set.
  7. Serve your delicious creation with sliced tomatoes on the side for a fresh touch.
