A quick and easy recipe for a delicious Spinach & Cheese Omelette that combines flavors of fresh spinach, garlic, and creamy havarti cheese.

- 2 tbsp extra virgin olive oil
- 3 cloves garlic, minced
- 1/2 onion, diced
- 2 cups fresh spinach
- 3 cage-free organic eggs
- 1 slice havarti cheese
- 1 tomato, sliced
- Pinch sea salt
- Pinch black pepper
Instructions
- Heat a nonstick frying pan over medium heat and add the olive oil. Allow it to warm up for about a minute.
- Toss in the diced onions and minced garlic, sautéing them for about 3 minutes until they’re soft and fragrant.
- Add the spinach to the pan. Let it cook until it wilts down, which should take about 2 minutes. Season it with a pinch of sea salt and black pepper to enhance the flavors.
- In a separate bowl, whisk together the eggs until they become a bit frothy. Pour the beaten eggs into the skillet over the sautéed veggies and let it cook for about 1 minute. Use a spatula to gently lift the edges, ensuring the omelette doesn’t stick.
- Place the slice of havarti cheese right in the center of the eggs. Fold the omelette carefully and let it cook for an additional minute.
- Gently flip the omelette and cook for another 30 seconds to ensure it’s set.
- Serve your delicious creation with sliced tomatoes on the side for a fresh touch.
Notes
