- 1 cup sugar
- 1/2 cup unsalted butter, softened
- 1 egg
- 1 teaspoon vanilla extract
- 2 cups all-purpose flour
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1 cup strawberries, chopped
- 8 oz cream cheese, softened
- 1/4 cup powdered sugar
- 1/2 teaspoon vanilla extract (for filling)
Instructions
- Preheat your oven to 350°F (175°C).
- Cream together the sugar and softened butter until light and fluffy, about 2-3 minutes.
- Beat in the egg and 1 teaspoon of vanilla extract.
- Mix the flour, baking soda, and salt in another bowl. Gradually add this dry mixture to the creamed mixture until fully incorporated.
- Fold in the chopped strawberries.
- Beat the cream cheese, powdered sugar, and the additional vanilla extract until smooth for the filling.
- Scoop a tablespoon of cookie dough, press it down slightly, add a teaspoon of cheesecake filling, and cover with more cookie dough.
- Place on a baking sheet lined with parchment paper and bake for 12-15 minutes, until the edges are golden brown.
- Let cool on a wire rack before serving.
Notes
These cookies are best served fresh. For a nice touch, dust with powdered sugar or drizzle with chocolate.
