Description

A delightful no-bake dessert featuring layers of fresh strawberries and elderflower flavor, perfect for any celebration.


Ingredients

  • 2 cups fresh strawberries, sliced
  • 1 cup elderflower cordial
  • 1 package sponge cake or ladyfingers
  • 1 cup heavy cream
  • 1/4 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1 tablespoon gelatin
  • 2 tablespoons water
  • Mint leaves for garnish

Instructions

  1. Prepare the strawberries: Slice the strawberries and place them in a bowl. Drizzle 1/2 cup of elderflower cordial over the strawberries and marinate for 30 minutes.
  2. Prepare the gelatin: In a small bowl, dissolve the gelatin in the water and let it bloom for 5 minutes. Gently heat until melted and mix into the remaining elderflower cordial.
  3. Whip the cream: In a separate bowl, whip the heavy cream, powdered sugar, and vanilla extract until soft peaks form.
  4. Layer the components: Line a cake pan with plastic wrap. Place a layer of sponge cake at the bottom and spoon half of the marinated strawberries over it.
  5. Add the elderflower mixture: Pour half of the elderflower and gelatin mixture over the strawberries, then add half of the whipped cream on top.
  6. Repeat the layers: Add another layer of sponge cake, followed by the remaining strawberries, elderflower mixture, and the rest of the whipped cream.
  7. Chill the dessert: Refrigerate for at least 4 hours or overnight for best results.
  8. Invert the cake: Carefully invert the cake onto a serving platter and remove the plastic wrap.
  9. Garnish and serve: Garnish with fresh mint leaves before serving.

Notes

Use ripe strawberries for the best flavor. Avoid over-whipping the cream to maintain a velvety texture.
