Instructions
- Preheat your oven to 350°F (175°C) and grease an 8×8-inch baking dish.
- Cream together the softened butter and sugar until the mixture is light and fluffy.
- Combine the flour, cornstarch, baking powder, and salt in another bowl; gradually add this dry mixture to your butter mixture and stir until just combined.
- Press the dough evenly into the bottom of your prepared baking dish.
- Toss the sliced strawberries with the lemon juice and 1 tablespoon of sugar, letting them sit for about 10 minutes.
- Spread the strawberry mixture evenly over the shortcake base.
- Bake for 25-30 minutes, or until the edges turn golden brown and the center is set.
- Allow the bars to cool completely before slicing and serve with whipped cream if desired.
