Description
A hearty, comforting twist on classic lasagna made with layers of tender sweet potatoes, creamy ricotta, savory marinara, and melted cheese wholesome, satisfying, and packed with rich flavor.
Ingredients
2 large sweet potatoes, peeled and thinly sliced
2 tbsp olive oil
1 tsp salt
1/2 tsp black pepper
1 tsp Italian seasoning
1/2 tsp smoked paprika
2 cups ricotta cheese
1 large egg
2 cups marinara sauce
2 cups shredded mozzarella cheese
1/2 cup grated Parmesan cheese
Fresh basil or parsley for garnish
Instructions
1. Preheat oven to 375°F (190°C).
2. Toss sweet potato slices with olive oil, salt, pepper, Italian seasoning, and smoked paprika.
3. In a bowl, mix ricotta cheese with egg until smooth.
4. Spread a thin layer of marinara sauce in the bottom of a baking dish.
5. Layer sweet potatoes evenly over the sauce.
6. Spread ricotta mixture over the sweet potatoes, then top with marinara.
7. Sprinkle with mozzarella and Parmesan cheese.
8. Repeat layers until ingredients are used, finishing with cheese on top.
9. Cover with foil and bake for 35 minutes.
10. Remove foil and bake an additional 15–20 minutes until bubbly and golden.
11. Let rest for 10 minutes before garnishing and serving.
Notes
Slice sweet potatoes very thin for best texture.
Add sautéed spinach or mushrooms for extra veggies.
Leftovers reheat well and taste even better the next day.
