  • 2 tablespoons Taco Seasoning (Homemade or store-bought)
  • 1 cup Pico de Gallo (Diced tomatoes, onion, cilantro)
  • 1 cup Guacamole (Mashed avocado with lime juice)
  • 1/2 cup Sour Cream (Or Greek yogurt)
  • Optional Toppings (Crumbled cheese, lime wedges, tortilla chips)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Toss the cubed sweet potatoes with olive oil, smoked paprika, salt, and pepper until well coated.
  3. Spread the sweet potatoes evenly on a baking sheet and roast for 20-25 minutes, stirring halfway through.
  4. Heat a skillet over medium heat and add the ground beef, cooking until browned (5-7 minutes).
  5. Sprinkle the taco seasoning over the browned meat and simmer for about 5 minutes.
  6. Assemble by layering roasted sweet potatoes, seasoned meat, pico de gallo, guacamole, and sour cream in serving bowls.
  7. Finish with optional toppings like crumbled cheese, lime wedges, or tortilla chips. Serve immediately.
