- 1 cup mango puree
- 2 tablespoons soy sauce
- 1 tablespoon honey
- 1 tablespoon rice vinegar
- 1 teaspoon garlic, minced
- 1 teaspoon ginger, grated
- Salt and pepper to taste
- Chopped green onions for garnish
Instructions
- Preheat your oven to 400°F (200°C) or heat a skillet over medium heat.
- Combine the mango puree, soy sauce, honey, rice vinegar, minced garlic, and grated ginger in a mixing bowl, mixing until well combined.
- Season the chicken breasts with salt and pepper to taste.
- For baking, place the chicken in a baking dish, pour the glaze over, and bake for 25-30 minutes or until fully cooked. For skillet cooking, cook the chicken for 6-8 minutes on each side until golden brown, basting with the glaze.
- Remove from heat, let the chicken rest briefly, slice it, drizzle with any remaining glaze, and garnish with green onions before serving.
