- 2 salmon fillets
- 1 cup cooked sushi rice
- 1/4 cup teriyaki sauce
- 1/2 cup cucumber, sliced
- 1/2 avocado, sliced
- 1/4 cup edamame
- Sesame seeds for garnish
- Green onions for garnish
Instructions
- Cook the sushi rice: Start by rinsing the sushi rice a few times under cold water. This helps remove excess starch. After rinsing, add the rice to boiling water, cover, and let it simmer until fluffy, following the package instructions.
- Cook the salmon: While the rice cooks, heat a skillet over medium heat. Place the salmon fillets in the skillet and cook them for about 4-5 minutes on each side.
- Add teriyaki sauce: In the last minute of cooking, brush your salmon fillets with the teriyaki sauce.
- Assemble the bowls: Once the rice is fluffy, divide it into two bowls.
- Top with toppings: Place sliced salmon on top of the sushi rice, and then add cucumber, avocado, and edamame to each bowl.
- Finish it off: Drizzle with extra teriyaki sauce if you like, and sprinkle some sesame seeds and chopped green onions as a garnish. Serve immediately and enjoy!
Notes
Serve in deep bowls for a beautiful presentation and consider adding pickled ginger on the side for extra flavor.
