  • 1 cup cooked sushi rice
  • 1/4 cup teriyaki sauce
  • 1/2 cup cucumber, sliced
  • 1/2 avocado, sliced
  • 1/4 cup edamame
  • Sesame seeds for garnish
  • Green onions for garnish

Instructions

  1. Cook the sushi rice: Start by rinsing the sushi rice a few times under cold water. This helps remove excess starch. After rinsing, add the rice to boiling water, cover, and let it simmer until fluffy, following the package instructions.
  2. Cook the salmon: While the rice cooks, heat a skillet over medium heat. Place the salmon fillets in the skillet and cook them for about 4-5 minutes on each side.
  3. Add teriyaki sauce: In the last minute of cooking, brush your salmon fillets with the teriyaki sauce.
  4. Assemble the bowls: Once the rice is fluffy, divide it into two bowls.
  5. Top with toppings: Place sliced salmon on top of the sushi rice, and then add cucumber, avocado, and edamame to each bowl.
  6. Finish it off: Drizzle with extra teriyaki sauce if you like, and sprinkle some sesame seeds and chopped green onions as a garnish. Serve immediately and enjoy!

Notes

Serve in deep bowls for a beautiful presentation and consider adding pickled ginger on the side for extra flavor.
