- 2 chicken breasts
- 1 cup orzo pasta
- 1 cup chicken broth
- 1/2 cup heavy cream
- 1/2 cup grated parmesan cheese
- 1 cup fresh spinach
- 1/2 cup sun-dried tomatoes, chopped
- 2 cloves garlic, minced
- Salt and pepper to taste
- Olive oil
Instructions
- Cook the chicken: Start by heating olive oil in a large pan over medium heat. Season the chicken breasts with salt and pepper, and cook them until they turn golden brown on both sides. Once they’re cooked, remove them from the pan and set aside.
- Sauté garlic and toast orzo: In the same pan, toss in the minced garlic and sauté it until it becomes fragrant—this will only take about 30 seconds to a minute. Next, add in the orzo pasta and toast it for about 1-2 minutes.
- Simmer the orzo: Pour the chicken broth into the pan and bring everything to a boil. Once it’s bubbling, reduce the heat and let it simmer for around 10 minutes until the orzo is cooked and has absorbed most of the liquid.
- Add cream and cheese: Now, stir in the heavy cream, grated parmesan cheese, fresh spinach, and chopped sun-dried tomatoes.
- Finish the chicken: Bring back the chicken breasts to the pan, cover it, and let everything cook together for another 5 minutes.
- Serve and enjoy: Once everything is ready, serve it warm, and watch as everyone digs in for seconds!
