Description

A hearty and comforting chicken dish featuring sun-dried tomatoes, fresh spinach, and a creamy sauce, perfect for family gatherings or cozy dinners.


Ingredients

  • 2 Chicken breasts
  • 1/2 cup Sun-dried tomatoes
  • 2 cups Fresh spinach
  • 1/4 cup Basil, fresh
  • 2 tbsp Olive oil
  • 3 cloves Garlic, minced
  • 1/2 cup Heavy cream
  • 1/2 cup Parmesan cheese, grated
  • Salt to taste
  • Pepper to taste

Instructions

  1. Heat the olive oil in a skillet over medium heat. Season the chicken with salt and pepper.
  2. Cook the chicken breasts for 6-7 minutes on each side until browned and cooked through. Remove from skillet.
  3. Sauté the minced garlic in the same skillet for about 30 seconds until fragrant.
  4. Add the sun-dried tomatoes and stir for a couple of minutes to warm them.
  5. Incorporate the fresh spinach and basil, stirring until the spinach wilts.
  6. Pour in the heavy cream and bring to a simmer to create the sauce.
  7. Stir in the Parmesan cheese until melted and smooth.
  8. Return the cooked chicken to the skillet, coating in the sauce, and warm through for a minute.
  9. Serve immediately with extra Parmesan or fresh herbs.

Notes

Serve over pasta or with a side salad. Store leftovers in the fridge for 3-4 days or freeze for up to 2-3 months.
