- 2 Chicken breasts
- 1/2 cup Sun-dried tomatoes
- 2 cups Fresh spinach
- 1/4 cup Basil, fresh
- 2 tbsp Olive oil
- 3 cloves Garlic, minced
- 1/2 cup Heavy cream
- 1/2 cup Parmesan cheese, grated
- Salt to taste
- Pepper to taste
Instructions
- Heat the olive oil in a skillet over medium heat. Season the chicken with salt and pepper.
- Cook the chicken breasts for 6-7 minutes on each side until browned and cooked through. Remove from skillet.
- Sauté the minced garlic in the same skillet for about 30 seconds until fragrant.
- Add the sun-dried tomatoes and stir for a couple of minutes to warm them.
- Incorporate the fresh spinach and basil, stirring until the spinach wilts.
- Pour in the heavy cream and bring to a simmer to create the sauce.
- Stir in the Parmesan cheese until melted and smooth.
- Return the cooked chicken to the skillet, coating in the sauce, and warm through for a minute.
- Serve immediately with extra Parmesan or fresh herbs.
Notes
Serve over pasta or with a side salad. Store leftovers in the fridge for 3-4 days or freeze for up to 2-3 months.
