Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin pan with cupcake liners.
  2. Whisk together the all-purpose flour, baking powder, and salt in a medium bowl.
  3. Cream softened butter and granulated sugar until light and fluffy in another bowl.
  4. Beat in the eggs one at a time, then stir in the vanilla extract.
  5. Add the dry ingredients to the wet mixture, alternating with milk.
  6. Divide the batter among the cupcake liners, filling each about two-thirds full.
  7. Bake for 18-20 minutes or until a toothpick comes out clean. Cool on a wire rack.
  8. Whip heavy cream with powdered sugar and vanilla extract until stiff peaks form for frosting.
  9. Pipe whipped cream onto each cooled cupcake and top with fresh berries and a mint leaf.
