Ingredients

- 1 can chickpeas, drained and rinsed
- 1/4 cup BBQ sauce
- 4 cups mixed greens
- 1 cup cherry tomatoes, halved
- 1/2 cucumber, diced
- 1/4 red onion, thinly sliced
- 1 avocado, diced
- 1/4 cup olive oil
- 2 tablespoons apple cider vinegar
- Salt and pepper to taste
Instructions
- Preheat your oven to 400°F (200°C).
- Spread the drained chickpeas on a baking sheet. Drizzle them with BBQ sauce and toss to coat evenly.
- Bake the chickpeas for 20-25 minutes until they get that irresistible crunch.
- Combine the mixed greens, cherry tomatoes, cucumber, red onion, and avocado in a large bowl.
- Whisk together olive oil, apple cider vinegar, salt, and pepper in a small bowl.
- Once the chickpeas are done and slightly cooled, add them to the salad mix. Drizzle everything with the dressing and toss gently to coat.
- Serve immediately and enjoy the compliments!
Notes
For extra flavor, consider adding grilled tofu or tempeh. You can also freeze the baked chickpeas for later use.
