A vibrant and wholesome salad featuring crispy chickpeas, fresh vegetables, and zesty BBQ sauce.


Ingredients

  • 1 can chickpeas, drained and rinsed
  • 1/4 cup BBQ sauce
  • 4 cups mixed greens
  • 1 cup cherry tomatoes, halved
  • 1/2 cucumber, diced
  • 1/4 red onion, thinly sliced
  • 1 avocado, diced
  • 1/4 cup olive oil
  • 2 tablespoons apple cider vinegar
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Spread the drained chickpeas on a baking sheet. Drizzle them with BBQ sauce and toss to coat evenly.
  3. Bake the chickpeas for 20-25 minutes until they get that irresistible crunch.
  4. Combine the mixed greens, cherry tomatoes, cucumber, red onion, and avocado in a large bowl.
  5. Whisk together olive oil, apple cider vinegar, salt, and pepper in a small bowl.
  6. Once the chickpeas are done and slightly cooled, add them to the salad mix. Drizzle everything with the dressing and toss gently to coat.
  7. Serve immediately and enjoy the compliments!

Notes

For extra flavor, consider adding grilled tofu or tempeh. You can also freeze the baked chickpeas for later use.
