Ingredients

  • 1 head of lettuce (butter or romaine)
  • 1 avocado
  • 100g vermicelli noodles
  • 2 carrots
  • 1 cucumber
  • 2 spring onions
  • 3 tablespoons peanut butter
  • 2 tablespoons soy sauce
  • 1 tablespoon honey or maple syrup
  • 2 tablespoons lime juice
  • 2 cloves garlic
  • 1 teaspoon grated ginger
  • Water (as needed)

Instructions

  1. Start by making the sweet peanut sauce. In a bowl, mix together peanut butter, soy sauce, honey or maple syrup, lime juice, minced garlic, and grated ginger. If the sauce is too thick, add water to thin it to your desired consistency.
  2. Prepare the vermicelli noodles according to the package instructions. Once cooked, set them aside to cool.
  3. While the noodles cook, slice the avocado, carrots, and cucumber into thin strips. Aim for consistency for easier assembly.
  4. Assemble the wraps by taking a lettuce leaf and filling it with a small amount of vermicelli, avocado, carrots, cucumber, and spring onions. Drizzle your sweet peanut sauce over the filling.
  5. Roll the lettuce leaf tightly around the filling, and your veggie lettuce wraps are ready to enjoy!

Notes

Kids can join in on the fun of assembling their own wraps. Serve with extra peanut sauce on the side for dipping.
