- 2 cups cooked chicken, shredded
- 1 cup shredded cheese (cheddar or Mexican blend)
- 1 cup bell peppers, sliced
- 1 cup onions, sliced
- 4 large flour tortillas
- 1 tablespoon olive oil
- Salt and pepper to taste
- Sour cream and salsa for serving
Instructions
- Heat a skillet over medium heat and add the olive oil.
- Toss in the sliced bell peppers and onions, sautéing until softened (3-4 minutes).
- Mix the shredded chicken with the sautéed veggies, adding salt and pepper to taste.
- Place one tortilla in the skillet and sprinkle cheese on one half, then add a scoop of the chicken and veggie mixture. Fold to create a half-moon shape.
- Cook for 2-3 minutes on each side until golden brown and cheese is melted.
- Remove from skillet and repeat with remaining tortillas.
- Cut quesadillas into wedges and serve hot with sour cream and salsa.
Notes
For serving, consider adding guacamole or a fresh salad. You can also freeze leftovers wrapped tightly for up to 2 months.
