Description

Deliciously cheesy quesadillas bursting with Mediterranean flavors, perfect for a quick meal or entertaining guests.


Ingredients

  • 4 flour tortillas
  • 1 cup fresh spinach (chopped)
  • 1/2 cup shredded mozzarella cheese
  • 1/2 cup crumbled feta cheese
  • 1 small tomato (diced)
  • 1/4 cup red onion (thinly sliced)
  • 1 tablespoon olive oil
  • Black pepper (to taste)

Instructions

  1. In a mixing bowl, combine the mozzarella cheese, feta cheese, chopped spinach, diced tomato, thinly sliced red onion, and black pepper. Mix well to create your filling.
  2. Lay one tortilla flat on a clean surface. Place one-fourth of the filling mixture on one half of the tortilla. Fold the other half over to cover the filling completely.
  3. Heat a non-stick skillet over medium heat and add the olive oil.
  4. Place the filled tortilla in the skillet and cook for about 3-4 minutes until the bottom turns golden brown.
  5. Carefully flip the quesadilla and cook for another 3-4 minutes until both sides are crispy and golden brown.
  6. Remove from the skillet, slice into wedges, and serve warm.

Notes

Serve with salsa, sour cream, or Greek yogurt. Can be stored in the fridge for up to 3 days or frozen for up to 3 months.
