Ingredients

- 4 flour tortillas
- 1 cup fresh spinach (chopped)
- 1/2 cup shredded mozzarella cheese
- 1/2 cup crumbled feta cheese
- 1 small tomato (diced)
- 1/4 cup red onion (thinly sliced)
- 1 tablespoon olive oil
- Black pepper (to taste)
Instructions
- In a mixing bowl, combine the mozzarella cheese, feta cheese, chopped spinach, diced tomato, thinly sliced red onion, and black pepper. Mix well to create your filling.
- Lay one tortilla flat on a clean surface. Place one-fourth of the filling mixture on one half of the tortilla. Fold the other half over to cover the filling completely.
- Heat a non-stick skillet over medium heat and add the olive oil.
- Place the filled tortilla in the skillet and cook for about 3-4 minutes until the bottom turns golden brown.
- Carefully flip the quesadilla and cook for another 3-4 minutes until both sides are crispy and golden brown.
- Remove from the skillet, slice into wedges, and serve warm.
Notes
Serve with salsa, sour cream, or Greek yogurt. Can be stored in the fridge for up to 3 days or frozen for up to 3 months.
