High Protein Chicken Enchiladas

A delicious and protein-packed dish perfect for family dinners or gatherings.


Ingredients

  • 2 cups shredded chicken
  • 8 corn tortillas
  • 1 cup white sauce (béchamel)
  • 1 cup shredded cheese (cheddar or Monterey Jack)
  • 1/2 cup diced onions
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon cumin
  • Salt and pepper to taste
  • Fresh cilantro for garnish (optional)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Combine the shredded chicken, diced onions, garlic powder, cumin, salt, and pepper in a mixing bowl. Stir to mix.
  3. Take one corn tortilla, spoon some of the chicken mixture into it, and roll it tightly. Continue until all tortillas are filled.
  4. Place the rolled tortillas seam-side down in a baking dish.
  5. Pour the white sauce over the enchiladas and sprinkle shredded cheese on top.
  6. Bake for 20-25 minutes or until the cheese is bubbly and golden.
  7. Let cool for a few minutes, garnish with cilantro, and serve hot.

Notes

For added flavor, marinate shredded chicken in taco seasoning. Add chopped jalapeños for heat.
