Ingredients

- 2 cups shredded chicken
- 8 corn tortillas
- 1 cup white sauce (béchamel)
- 1 cup shredded cheese (cheddar or Monterey Jack)
- 1/2 cup diced onions
- 1/2 teaspoon garlic powder
- 1/2 teaspoon cumin
- Salt and pepper to taste
- Fresh cilantro for garnish (optional)
Instructions
- Preheat your oven to 375°F (190°C).
- Combine the shredded chicken, diced onions, garlic powder, cumin, salt, and pepper in a mixing bowl. Stir to mix.
- Take one corn tortilla, spoon some of the chicken mixture into it, and roll it tightly. Continue until all tortillas are filled.
- Place the rolled tortillas seam-side down in a baking dish.
- Pour the white sauce over the enchiladas and sprinkle shredded cheese on top.
- Bake for 20-25 minutes or until the cheese is bubbly and golden.
- Let cool for a few minutes, garnish with cilantro, and serve hot.
Notes
For added flavor, marinate shredded chicken in taco seasoning. Add chopped jalapeños for heat.
